That was my first time tasting Pig Foot Souse and my introduction to some of the other dishes that really make Trinidadians stand out.

Souse is from different parts of the pig, the cow, and the chicken. One can use different parts like the feet, the head, the ears, and the tail. The meat parts marinate in flavored broth or brine for a short time before actually cooking. This type of cooking is common in Trinidad and originates from their European Ancestors.

Now, I will focus on the feet. That’s what the Trinidadians use for their Pig Foot Souse. They make it very easy and simple but taste great and enjoyable.

Here are the ingredients:

  • Pig feet (as much as how big is the party)
  • fresh local seasonings
  • garlic
  • onion
  • pepper
  • vinegar or lime juice
  • cucumbers
  • thyme
  • salt

Make sure to chop up all ingredients or blend them in a blender and them together in a pot with water. allow cooking until the meat is easy to separate from the bone. Cooking time may be a couple of hours. You can check in from time to time to make sure the meat and pigs’ feet cook properly. Test with a fork. Make sure to season to taste with beef billion or chicken flavor powder or add Montreal Steak Seasoning. A combination of each of those seasonings will also do well.
